Winter Warmer: Nutty Apple Chia Porridge

The cooler weather has definitely set in here in Perth and there is nothing better than warm porridge on cold winter mornings. However (in case you haven’t already guessed from all my GF recipes) I have been gluten intolerant for four years now so that cuts out many traditional porridge recipes. This recipe has taken some time to perfect, but when this porridge tastes like apple pie, fills your tummy and is the perfect (healthy) fuel to start your day all that time was worth it.

My Nutty Apple Chia Porridge is refined sugar free, gluten free (obviously), dairy free, vegetarian and also vegan, so it’s perfect for brunch when fussy foodie friends come calling on the weekend! Chia seeds are called a super food for a reason – they are packed full of fibre, omega-3 fatty acids, antioxidants, and even protein making them an excellent fuel to kick start your body at the start of the day. But putting all that healthy stuff aside, it really all comes down to taste and my porridge tastes so good you’ll want it for dessert too!


What You’ll Need:

  • 1 apple cored & roughly chopped (green apples are best)
  • 1/2 cup of coconut milk
  • 2 tablespoons of chia seeds
  • 2 tablespoons of nut butter (I prefer almond)
  • 3 dates roughly chopped
  • 1 tablespoon of maple syrup
  • 1/2 teaspoon of cinnamon
  • 1/2 teaspoon of nutmeg
  • 1 teaspoon of vanilla bean paste (optional)
  • Chopped pecans & walnuts (to garnish)
  • Shredded coconut (to garnish)

What You Need To Do:

  • Place all ingredients into a blender (apart from the pecans, walnuts & shredded coconut) and blend until the mixture is smooth.
  • Transfer the mixture into a small saucepan and heat on low – stirring constantly.
  • Once the porridge is heated to desired temperature (takes around 3-5 minutes) place in a bowl and top with the pecans, walnuts and shredded coconut.
